At 28 years old, the chef de cuisine heads up his own catering company as well as his recently opened restaurant by Brian Lumley in New Kingston. He has received a number of awards and won a number of competitions for his culinary skills, including Caribbean Chef of the year at the Taste of the Caribbean competition in Miami.
He worked through the ranks as the youngest sous chef ever at Abigail Kirsch, an elite New York catering company, alongside Chris Santos as chef de cuisine of Restaurant Mojo, and on the opening of Stanton Social.

With that in mind, it seems like destiny that Colin's new restaurant, Guilt, is now in the same location of Norma Shirley's former restaurant at the Devon House. Known for his sweet sensory creations, as well as his explosive fusing of flavours and aromas inspired by Asia, Hylton has been recognised locally and internationally for his culinary skills.
